Dinner In A Pumpkin
Ingredients
1 med-large pumpkin with top cut off and thoroughly cleaned out
1 1/2 pounds of turkey, ground beef or sausage- your choice
Instant brown rice- enough for 6 cups of cooked rice
1 small yellow onion, chopped fine
1/2 tsp of ground sage
1/2 tsp of ground rosemary
1 tsp of salt
2 tbsp Olive oil, butter or margarine
Directions
Heat oven to 350 degrees
Heat olive oil, butter or margarine in a large sauce pan on medium heat until thoroughly heated or melted.
Add onion and cook until translucent on medium heat.
While onion is cooking, in a separate pan, prepare your instant brown rice following the box's instructions.
Add meat and spices to the sauce pan and cook thoroughly. Set aside once cooked and wait for the brown rice to be done.
Make sure that your pumpkin will set level on a baking sheet; slice a small section of the bottom of the pumpkin if necessary, and place on top of a sheet of tin foil onto the baking sheet. This will make clean up easier.
Once the brown rice is done, combine the rice and the browned meat either in the skillet, or in a large heat-resistant mixing bowl.
Pour the combined ingredients into the pumpkin shell and replace the top of the pumpkin.
Place the pumpkin on the baking sheet into the oven and cook for 45 minutes to 1 hour, depending on how large the pumpkin is.
You should be able to stick a fork into the side of the pumpkin easily. Another way to check for doneness is to take the top off of the pumpkin and stick the inside of the pumpkin with a fork, checking for tenderness.
Once done, allow to cool for at least 15 minutes. Serve by cutting the pumpkin into equal sections. Season with additional salt and pepper to taste.
