Pumpkin Spice Drop Cookies

This recipe is a very simple spice cookie recipe that uses pumpkin as a main ingredient.  Perfect for a Halloween party or school treat!  These cookies also freeze well for several months when sealed in two plastic zip bags or in a cookie tin inside of a large plastic zip bag.

Ingredients

1 15 oz can of pumpkin
1 18 oz box of spice cake mix

Directions

Heat oven to 350 degrees.

In a large bowl, mix the two ingredients together thoroughly.

Drop by rounded teaspoonfuls onto a greased cookie sheet, or a cookie sheet with a non-stick silicone liner.

Bake for 8 to 10 minutes until they begin to brown slightly around the edges.

Remove from oven and allow to cool for 5 minutes before moving them to a wire rack.

Version 1:  Add 1/2 cup of raisins and walnuts
Version 2:  Add 1/2 cup of golden raisins and pecans
